Pumpkin pie cake

AKA Pumpkin Dump Cake

Ingredients

  • 1 large or 2 small cans of pumpkin (NOT the pie filling)
  • 1 c. sugar
  • 3 eggs
  • 13 oz can Evaporated milk (NOT sweetened condensed)
  • 1/2 tsp. salt
  • 1 tsp. EACH nutmeg, allspice, ginger, cinnamon

Preparation

Preheat oven to 350 degrees Farenheit. Mix above ingredients thoroughly and pour into a 9″ x 13″ pan sprayed with Pam.

Sprinkle over pumpkin:

  • 1 c. chopped nuts
  • 1 box yellow cake mix

Drizzle 1 1/2 sticks of melted margarine over the top.

Bake 45 - 60 minutes until a silver knife comes out clean.

Afton’s chocolate sauce

Ingredients

  • 4 oz. baking chocolate
  • 1 cup sugar
  • 1 cup brown sugar
  • 1/2 cup of butter
  • 1 12-oz can of evaporated milk
  • 1 teaspoon vanilla

Preparation

In a double boiler, melt the chocolate and the butter until they’re smooth, then stir in the the sugars. When they’re all dissolved stir in the evaporated milk. When it’s all incorporated remove from heat, add a teaspoon of vanilla, and serve over whatever you like with chocolate: vanilla ice cream, cream puffs, brownie cake, green grapes, shortbread, etc.

Dump cake

Ingredients

  • 1 package yellow cake mix
  • 1 can cherry pie filling
  • 20-ounce can crushed pineapple in syrup, undrained
  • 1 cup chopped pecans
  • ½ cup butter or margarine, cut into thin slices (cut while cold)

Preparation

Preheat oven to 400 degrees. Grease 13×9x2″ pan. Dump undrained pineapple into pan, spread evenly. Dump in pie filling and spread evenly. Dump dry cake mix onto cherry layer, spread evenly. Sprinkle pecans over cake mix. Put butter on top. Bake for 35-40 minutes. Serve warm or cold.

Variation

To make a black forest cake variation, substitute chocolate cake mix for the yellow cake mix, and two cans of cherry pie filling in place of the other fruits. Top with whipped cream.

Chocolate buttermilk cake with chocolate cream cheese frosting

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoon baking soda
  • ½ teaspoon salt
  • 1/3 cup cocoa
  • 2 eggs
  • 1 cup oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 cup boiling water

Preparation
Mix flour, sugar, soda, salt, and cocoa. Add eggs, oil, buttermilk and vanilla. Mix well. Add boiling water. Pour into 9×15 greased cake pan. Back at 350° for 35-40 minutes.

Chocolate Cream Cheese Frosting

Ingredients

  • 1 small package cream cheese
  • 1/3 cube butter or margarine
  • 1 teaspoon vanilla
  • Powdered sugar as needed

Preparation
Beat until fluffy.

Better Than Sex

Ingredients

  • 1 ½ cups flour
  • 1 cup butter or margarine
  • 2/3 cup chopped walnuts
  • 1 cup powdered sugar
  • 1 8-ounce package softened cream cheese
  • 1 9-ounce whipped cream topping
  • 1 small package instant chocolate pudding mix
  • 3 cups milk

Preparation
Combine as pie crust flour, butter/margarine, and walnuts. Press into 9×13x2 baking dish. Bake 30 minutes at 350°. Cool.

Beat together the sugar and cheese and then add half of the whipped topping. Spread on crust.

Make up pudding with three cups of milk. Spread on cheese layer. Spread remaining whipped topping. Sprinkle with nuts or grate a Hershey bar and sprinkle on top. Chill. Serve cold.
